The fishing methods for sea urchin now
and then did not change much.
One of our sea urchin fisherman tells. He is riding on a small single-seater boat, hanging out of the boat while looking through a special looking glass to the bottom of the sea. He uses a long spear or sometimes even dives directly into the sea to fish the sea urchins, all one by one, all by hand. Under bad weather conditions such as rain or wind, it is not possible to fish for sea urchins, which makes the fishing process all the more difficult and special. It is all in the fishermen's experience.
The freshness of sea urchins is most important.
Fishing for sea urchin is only possible in a very short time frame, each fishing ground has its own season. We at Ogawa Shoten have worked hard to establish a system which allows to transport the product quickly to our processing facilities, ensuring ultimate freshness of our products.
Thorough hygiene management is keystone to our business.
The sea urchin is split, and its contents taken-out to be then cleaned carefully. The delicious parts are then carefully arranged into the product package in such a manner that they are long-lasting in their delicious state - all manually of course.
